Raw Mango and Bottle Gourd Dal Recipe | Khatta Meetha Lauki-Aam Dal

Learn how to make Raw Mango and Bottle Gourd Dal or Khatta Meetha Lauki-Aam Dal ~ Sweet and sour, creamy raw mango and bottle gourd lentil soup tempered with spices and curry leaves

What is summer without mangoes? Nothing, there is nothing in this world that screams summer to me like looking at the king of fruits. Be it emerald shaded raw mangoes and the rich golden hued mangoes, their sour and sweet flavour is unbeatable. It is and it will always be mangoes that rule my world and my childhood memories. Forget all exotic fruits; pineapple, peach, kiwi, plum, berries; nothing can ever come quite close to magnificent Mangifera Indica in flavour, taste or aroma. It’s a same story every year. Just one look at them and I start reminiscing about the Mango Season, the season of the king of fruits, back home in India.

Come summer and it meant only one thing for me and my siblings, long vacation at paternal and maternal granny’s home. The memories of those sunny, glorious summer days of endless fun, pranks and digging our teeth into succulent mangoes warm my heart even today. Granny’s house was just like many other beautiful tiled-terraced houses (or more like mansion) in my native village in southern India. Surrounded by acres of greenery, the white house with red tiles stood tall and proud with wide porches running around the house. Polished to perfection red oxide floors would gleam with intricately carved thick rosewood pillars supporting the roofs. The trees around the big house served as the compound walls and the beautiful water stream flowing right next to the house was its gate. Magnificent tall jackfruit, tamarind, coconut trees competed against each other for the title in the backyard.

Lasooni Dal Palak Recipe | Quick and Easy Dal or Lentil Soup Recipes

Learn how to make Lasooni Dal Palak ~ Garlic flavoured lentil and spinach soup

As my mother complained about hot weather in India, unusual for this time of the year, I just wished I was at home in India as I gazed at grey skies wearing my winter jacket, snow boots and my hands tucked inside my jacket pocket to keep it warm! Spring in India is much hotter than the summers here in UK and the signals how brutal the summers are going to be. With air conditioning turned on during spring season, especially in the night, I can just imagine the kind of summer India is going to welcome in couple of weeks. I hate hot weather and the only thing that made the heat bearable was the arrival of summer bounty, especially mangoes. But given a choice, I will gladly take the sweaty and hot sunny days over the gloomy cold weather. I thought I was immune to it, and to be frank, I didn’t even care for the weather as I did enjoy the cold winters especially coming from a hot tropical country where the sun shines for 365 days a year! But I guess this is what happens to someone who hasn’t seen the face of sun god for weeks!

This winter by far been worse one during my 10 years of living in the UK. It feels like a big joke when the leader of first world says climate change is a fake news when we are still in the clutches of ruthless winter god even after mid-March! With terrible mood swings and low energy, I can’t wait to get enough of Vitamin D in summer. But if days continue to be this cold and gloomy, we might as well skip spring entirely and welcome summer! ~sigh~ Maybe it’s time to plan a trip to some sunny part of the world, or just cook something that brings the colours of summer in a bowl… Since the first one seems like out of reach as hubby is buried under workload, the latter is the only choice as of now…

Learn how to make Khatti-Meethi Lauki Dal ~ One pot sweet and sour bottle gourd lentil soup

A week before the madness of Christmas holidays began, I received a large box of parcel from the Forma House, a UK based company specialising in unique home ware products sourced from around the globe. With all that running, organising and buying mini truckloads of presents for the family and friends, it was a pleasant surprise to receive something special during the festive season. The package contained two beautifully crafted pieces of Sapori Collection from the well-known brand La Porcellana Bianca; Sapori Potato Pot and the Sapori Casserole Pot in a beautiful shade of red. This post is about my experience of using this elegant cookware extensively in my kitchen for the last one month and also about how you can enter a giveaway to win this striking Sapori Casserole Pot worth £55!

I normally work with brands which are best fit for my blog readers and usually take couple of weeks to extensively test the products in my kitchen before posting an honest review as I don't believe in misleading the blog readers with false information. It has been little over a month since I started using the Sapori pots in everyday cooking and it was not difficult to fall in love with such beautifully crafted pieces of cookware. Both products came with very useful instruction manual as how to clean the product before using. The Sapori collection is created to meet the needs of people who are constantly looking for ways to enhance the flavours without compromising the nutrition quotient of food. It is designed for those who want to rediscover the joy and real taste of traditional recipes, whilst still being healthy.

Sprouted Peas Dal Recipe | Kid Friendly Dal Recipes

Learn how to make Sprouted Peas Dal ~ Sprouted green and yellow peas cooked in sweet and sour split pigeon peas lentil gravy

It was a dull day yesterday. What looked a promising week full of sunshine and high temperature; it was dull, grey, cheerless and just blah! I didn’t sleep on previous night and the light headache that I woke up to gave me company through out the day and became a really-big-headache kind of headache by the time we reached home! And the fact that I missed 2 successive days of my exercise regime to get in shape and beat hubby at bike race just added more guilt and bruises to my pride.

Moong & Spring Onion Dal: Bit of Sunshine for Winter Days

Moong & Spring Onion Dal

Yes Saar, you, remember we meet everyday, and almost every working hour in office? Yes, you, the one who comes to my office without any particular reason and talk and talk and keep on talking when I am trying hard to debug the code. Oh! You think it is simple task to find this error among thirty thousand lines do you? Don’t you think it’s high time you went back to your office and did some constructive work or would you rather prefer me to cut your tongue off and gift warp it and give it to you for Christmas?

And you Miss the one on telephone from last one hour. I know you had fun last weekend with your new boy friend but I am not interested in knowing the details. I don’t think other people want to know about your new pink silk bed sheet. Would you like to hear me talking loudly about that ugly yellow skirt you are wearing with my friend on phone? No? I didn’t think so. So why don’t you shut up or use your cell phone and just walk out of the office? The main door is just 5 feet from your desk you see!

And you Mr & Mrs. Neighbours, would you kindly reduce the volume of your new home theatre system. I know that it’s all nice and all but I don’t think heavy metal music at 2 in the morning is my cup of tea. And I don’t think you will like the rocket I want to fit into your system which will hit the roof and reach sky within a blink of your eyes. Would you?

And you Madam, yeah, we met near office cafeteria today afternoon. Yes, you, the one with dark glasses. Didn’t you notice it is winter and it was cloudy and dark outside? I don’t think you are blind because I have seen you many a times without your cool shades. Do you think energy saving lights is too harsh for your eyes? No? Oh! That is your new Gucci shades, is it? I know they are expensive and but it is absolutely fine to remove them when you are inside office building. That doesn’t mean you have to wear them on your head when we all know you will be here till evening. Do I mind? Actually no, but I feel it’s rather uncool to wear cool Gucci shades inside your office building.

And you my dear friend, yes I am talking to you, who took her 2 year old to see this awful horror movie. Did you say you have kept your brain locked safely in locker? I thought as much. Any lady with little sense wouldn’t take her kid to these movies and later complain about her kid screaming and wetting his bed at night. And stop bothering me with the details. No, I am not against kids. In fact I adore them. But I would rather prefer to watch Cars, Shreak and Kung Fu Panda with my niece and nephew and scream with them in delight than be a reason for their sleepless nights. So shut up and please grow up!!!

Ufff… I am done for the day! At least for now… I had a rough day and needed something to cheer me and lift my mood. Every time its comfort foods that keep me sane and going during days like this. And yesterday it was simple Moong & Spring Onion Dal which boosted my energy and brought back smile on my face. I wanted to fix something with sorry looking, wilted bunch of spring onions in my veggie rack and wanted to cook something that will take just few minutes in kitchen. Dal is something that I like to have either with Rice or Chapatti and Pickle or simply served as soup. This time I chose Moong Dal because it is light and easy on stomach and cooks very fast. I could feel day’s stress slowly fading away while chopping the vegetables for Dal and the aroma of roasted spices lifted my spirit. By the time I finished preparing this Dal and tasted a spoonful of it, I was smiling. What more a person wants for cold, winter days… A bowl full of sunshine… A bowl full of comfort… And a Bowl full of happiness…

Method:
Add turmeric powder, a drop of oil and 2 cups of water to washed moong dal and cook till the lentils are cooked though without loosing their shape, about 10-15 mins.
Mean while, chop all the vegetables and keep them aside. Heat oil or ghee in a pan and add cumin seeds, mustard seeds, nigella seeds, fenugreek seeds, halved dry red chillies, hing and curry leaves. Sauté for a minute till the spices turn golden brown and aromatic.
Next add finely chopped garlic and slit green chillies and sauté for half a minute. Mix in white parts of spring onions along with chopped ginger and sauté till onions becomes translucent, about 1-2 mins.
Add garam masala and chopped tomatoes and cook on medium heat for 2 minutes till tomatoes turn pulpy. At this stage add cooked moong dal, jaggery and salt to taste. Pour 1- 1½ cups of water and simmer the dal. Let it cook for another 10-15 minutes so that all the flavours blend well.
Mix in lime juice and greens of spring onion and let it cook for another 2-3 minutes. Switch off the flame and add finely chopped coriander leaves. Serve it hot as a soup or along steam cooked Rice or any Indian bread and enjoy.
