In Indian kitchens, the spices and herbs are used to enhance the natural flavour of food, and not to disguise or obscure it and this takes years of experience gained only by practice and patience. There is no general rule for the correct amount of spices and herbs to use as the pungency of each spice and herb differs and its effect on different foods varies.

After staring at the blinking curser for another five minutes, I decided to step out and get me a nice cup of green tea with ginger and honey to lift my spirit on a grey and windy day. As the kettle hissed as it boiled water, there was a sudden shower of hailstones from the skies, hitting angrily at the glass window panes. The pearls of ice that looked like a thermocol balls looked pretty on the lawn and reminded me of my hostel days in Dharwad where we collected them in buckets to pour them down from the terrace at unsuspecting visitors! The fond memories made me smile and shake head at our silly, harmless pranks. Ah, those carefree days of student life where fun was the mantra of life! My lips curved up with a nostalgic smile and it remained there as I sipped my tea watching the hailstones bounce off the floor and then settle comfortably. Halfway through my cuppa, I saw the clouds part and sun come out with all his glory and kiss the pearls of ice and melt them into a small puddles. Ah, the very unpredictable British weather! One minute it is raining, the next there is hailstones and the moment later the sun is shining only to hide behind the dark clouds as though a naughty boy has been sent back to his room while trying to sneak downstairs after way past his bedtime!

When I think of lavish, one of a kind centre piece for lavish (vegetarian/vegan) dinner party, the first dish that comes to my mind is Gobi Musallam. Some dishes are not found in any restaurants and this Gobi Musallam is one such dish where whole roasted cauliflower in a creamy makhani gravy. This stunning Gobi Musallam is one dish which is truly inspiring and impressive where a humble cauliflower is elevated to gourmet standard. This is one dish that always grabs attention from my guests whenever I cooked for them and it is one dish that has never let me down when it comes to its flavour. It’s an impressive dish to look at and also in taste with delicately balanced combination of assorted whole spices which lends amazing flavour. I am mighty excited to share this recipe that is sure to win hearts of even pickiest eaters.



The recipe is inspired by the whole stuffed chicken roast called Murgh Musallam where a whole chicken is marinated, sometimes stuffed with boiled eggs and keema (minced lamb meat), and cooked in a rich makhani gravy flavoured with whole spices. Considered as a gourmet dish, Ibn Battuta describes Murg Musallam as one of the favoured sishes at the court of Sulan Muhammad Ibn Tughlaq (1345 AD), in the book ‘Tracing the boundaries between Hindi and Urdu’. In Ain-e-Akbari (or Constitution of Akbar, 16th century detailed document recording the administration of emperor Akbar’s empire), Murg Mussalm is referred as Mussammn. Abul Fazl, the author of Akbarnama (or Book of Akbar, is the official chronicle of the reign of Akbar) and Ain-e-Akbari, one of the nine gems (Navaratna) in Akbar’s court mentions Murgh Musallm as one of the thirty dishes served in royal court in emperor Akbar’s biography 'Akbarnama'.

Another week has swished through and I am left gasping for a breath as I run around home, school, and everything in between trying to get back to the normal school term routine. LD has started his second year in school and just a week later, it feels so much busier than the year before! I want to grab the time by its shoulder, shake it and tell sternly to slow down… What is the hurry? Why rush when one want to slow down and smell the roses?!



Gone are the days of snuggling for extra hours in the morning, pillow fighting until our tummies ached after laughing… Gone are the days of waking up to streaming sunlight through the little gap between the blackout curtains fluttering in the morning breeze, and not to have to wake up to the shrieking noise of alarm clock… Gone are the days of leisure breakfasts, stroll in the woods and gardens, doing everything and nothing, and simply enjoying each others' company… Gone are the days of late night dinners, treats, movies and never ending bedtime stories… The first few weeks of getting back to normal routine after the summer holidays are always tough, but this feeling too shall pass as we embrace the fun bits of school life. It’s just a matter of time… It’s always a matter of time before everything falls into place! Like preparing a weekly menu with simple but wholesome dishes which can be made under half an hour on a busy weekdays, like this creamy Dhingri Matar Curry or Vegan Mushroom and Peas Curry.

A very, very good pot of Hyderabadi Vegetable Dum Biryani is one of the top 5 favourite foods of mine. It is one dish that I can have it for breakfast, lunch and dinner! Yes, that’s how much I LOVE it. There is something quite magical about the whole process of making and eating it, right from carefully roasting the spices for Biryani Masala Powder to layering it. It is quite exceptional experience to open the sealed lid to reveal the perfectly cooked biryani with its heady aroma to finally eating a morsel of this heavenly meal where each grain of rice is kissed by the spices.



As a teenager, I had mastered 3 of my most favourite ‘fancy’ dishes; Malai Kofta, Gobi Manchurian, and Veg Cutlets. When I was in 11th, our science teacher Miss Maria who also happened to head exclusive ‘Ladie’s Club’ for the young ladies taught us to make Hyderabadi Vegetable and Chicken Dum Biryani. It makes me wonder if it is the life changing event that is taking place in our life that’s making me twiddle my thumbs and raise my heart beat rate? Is it the excitement and nervousness that’s making me lose my sleep, and may be even my mind! I wanted to talk about it as there is no tomorrow, but it seems it’s not going to happen today! Hopefully the words will come to my mind and flow through my fingertips as they will tap and dance on the keyboard like those Irish dancers I saw few weeks ago. Since the words refuse to surface in my mind, I will share the recipe that I experimented few months ago and to my pleasant surprise it turned out to be one of best tasting chutneys.
